
I discovered this recipe in one of my College Cooking Courses. I have saved it through the years, and is one of the all-time BEST cookie recipes I have EVER made. Enjoy!
You will need:
1/2 cup of shortening (don't substitute this...seriously)
1 cup of peanut butter (I use a small jar...the whole thing)
1/2 cup granulated sugar
1/2 cup brown sugar (packed)
1 egg
1 1/4 cup all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon of salt
Mix the shortening, peanut butter, white sugar, brown sugar and egg. Blend in the flour, baking soda, baking powder and salt. Cover and chill for an hour.
Spoon out dough on a greased cookie sheet (or parchment paper). Score with a fork.
Bake 10-12 minutes at 350 degrees.
